You may want to add a different spice or maybe some dried fruit or berries. My advice is to go with what feels right, as I tell my children when they ask me how much seasoning or spice when they are cooking ‘listen to the voice of your ancestors’. Sorry if that’s not much help, they don’t think it is either haha! What I mean is, live a little! Use your intuition.

  • 500g of Plain AllPurpose Flour
  • 250g ofCold Butter– the rule of thumb is half the amount of fat to flour

  • 1 Large Egg
  • 1KG Apples
  • 100g Caster Sugar
  • 1 Tbsp Cornflour
  • ½ tsp Cinnamon

NB: I like to usecoconut sugarin place of caster sugar becausecoconut sugaris less processed with a higher micronutrient content.

You can use afood processorif you prefer just make sure not to over-process the dough or you will end up with a toughpie shell.

Once the dough has come together, wrap it and let it rest in the fridge. I like to use beeswax paper but you can use cling film orparchment paper.

Whilst thepie doughis resting, you can prepare the apple filling.

Chop your apples intoapple slicesand set aside in alarge mixing bowl. You can choose to add a couple of tablespoons oflemon juiceand rub this into the pieces to stop them from changing colour.
